However, the fish pickled in this way could be kept for up to a year.Starting from the Mekong River, this preservation method also became popular in regions of China and from there spread to Japan. In China, this preservation method has not survived to this day. But fish preserved using this method is still eaten in both Thailand and Taiwan.In Western countries, sushi became popular during the second half of the 20th century. The first sushi restaurants in western countries primarily aimed at Japanese customers living abroad.Consumption: The traditional way of eating sushi in Japan differs from the way it is eaten in western countries.However, the way it is eaten is also subject to change in Japan, since sushi has also developed into a fast food restaurant there.
