For a given weight and hardness of steel, choosing a more expensive alloy will allow for longer tempering.
A basic rule of thumb is that softer alloys are used for smaller blades, and harder alloys are used for longer knives. Other factors are heat treatment, sharpening, tempering, geometry, and design .
