Francesca e Walter sono una coppia di giovani delinquenti che hanno appena rubato una preziosa collana in un albergo. Per sfuggire alla cattura da parte della polizia, Walter affida la collana a Francesca e i due si uniscono al treno delle mondine, dirette al lavoro stagionale nelle risaie. Fra queste vi è la giovane Silvana, con cui Walter balla il boogie-woogie, soprattutto per nascondersi dalla polizia, per poi essere riconosciuto e scappare.

In treno, Silvana è incuriosita da Francesca e per aiutarla le fa ottenere un lavoro da mondina "clandestina" (senza contratto). Nel dormitorio, Silvana scopre poi la refurtiva di Francesca, la collana, e la prende a sua volta. Per eliminare Francesca, la accusa di crumiraggio. Francesca viene salvata da un probabile linciaggio dal sergente Marco Galli, che pacifica i due fronti. Francesca riesce a coinvolgere altre compagne irregolari e alla fine convince tutte le mondine ad una protesta comune, perché siano assunte tutte regolarmente.

Silvana poi si scusa con Francesca, dicendole di aver agito stanca e nauseata dalla faticosa vita di mondina, e le restituisce la refurtiva. Al fatto assiste Marco, di cui Francesca si innamora, ma che è a sua volta innamorato di Silvana.

L'arrivo di Walter, che aveva atteso lontano il calmarsi delle acque, porta scompiglio durante una festa serale. Dopo aver "preso a prestito" nuovamente la collana a Francesca, Silvana balla di nuovo con Walter fra le mondine e i braccianti. Sul posto arriva Marco, che vedendo la collana si arrabbia con Silvana, e dopo averle strappato la collana dal collo, si azzuffa con Walter.

Walter allora rivela a Francesca che la collana rubata è falsa e la lascia, mentre per corteggiare Silvana le offre lo stesso monile come regalo, nascondendole però la verità. Abbagliata dalla prospettiva di vita che le offre Walter, Silvana diventa la sua amante. La mossa di Walter non è casuale: l'uomo è infatti in combutta con tre complici per rubare il riso raccolto e si assicura così l'aiuto di Silvana: poco prima di essere incoronata "Miss Mondina 1948", Silvana apre le paratoie e allaga la risaia. In questo modo, mentre tutti si adoperano per salvare le coltivazioni, Walter può prepararsi a fuggire indisturbato col riso.

Riso amaro è un film del 1949 diretto da Giuseppe De Santis e prodotto da Dino De Laurentiis. Definito il capolavoro neorealista di De Santis, fu girato nelle campagne vercellesi, più precisamente nella Cascina Veneria (comune di Lignana) e nella Tenuta Selve (Salasco).
Fu presentato in concorso al 3º Festival di Cannes.

Bitter Rice begins at the start of the rice-planting season in northern Italy. In an effort to escape the law two small-time thieves, Francesca (Doris Dowling) and Walter (Vittorio Gassman), hide amongst the crowds of female workers heading to the rice fields of the Po Valley. While attempting to board the train for the fields the pair runs into Silvana (Silvana Mangano), a peasant rice worker. Francesca boards the train with Silvana, who introduces her to the planter's way of life. Francesca does not have a work permit, and struggles with the other "illegals" (known as "scabs") to find a place on the rice fields.

After initial resistance from documented workers and bosses, the scabs are allowed a place in the fields. At the fields Silvana and Francesca meet a soon-to-be-discharged soldier, Marco (Raf Vallone), who unsuccessfully tries to attract Silvana's interest. Soon after, Walter tracks Francesca down at the rice fields and plots to steal rice from the storehouses during the celebration at the end of the planting season. Silvana is attracted by what she sees as the glamour of Walter's wealth, and becomes his new partner in crime. Francesca, meanwhile, is disenchanted with her former criminal lifestyle.

Bitter Rice (Italian: Riso Amaro) is a 1949 Italian film made by Lux Film, written and directed by Giuseppe De Santis. Produced by Dino De Laurentiis, starring Silvana Mangano, Raf Vallone, Doris Dowling and Vittorio Gassman, Bitter Rice was a commercial success in Europe and America. It was a product of the Italian neorealism style. The film was nominated for the 1950 Academy Award for Best Story. It was also entered into the 1949 Cannes Film Festival. The Italian title is based on a pun; since the Italian word riso means both "rice" and "laughter", Riso amaro means both "bitter laughter" and "bitter rice" in light of the story.
